Removing an NPC
 

Is there a way to remove an NPC without killing it? Simply make it despawn, disappear into thin air?

There is a simple command called '/npc kill'. '/npc kill all' kills all npcs obviously, '/npc kill (npc name)' kills specific npc.
There's no way to remove an NPC without making a corpse :P
