My favourite is Gardens of Theed, by far.
I really liked to completely clear it (blowing up the AATs with the "happy" cheat) and calling the place "my private gardens"
.
I also liked the Trade Federation Ship level. I have always liked the opening scenes of TPM, and the level captures the feel decently.
