I think it's really important to preserve the original stories and scripts in these special editions. Full Throttle has the same problems as CMI with regard to special editions, it would take a lot of work involving the original artists. Full Throttle is a better candidate due to its low res, and they could probably paint over everything like they've been doing. I don't think CMI needs a special edition at all, perhaps a re-release with higher quality sound is all that is required. There's a vast difference between 320 and 640 pixels, and CMI still looks fairly good.
I say DOTT needs the next SE
And Full Throttle II. Bring it on.

Interestingly, Tim Shafer jokes about the "Special Edition" of Full Throttle in the readme.txt that comes with the game.
This is a really tiny bunch of options, though! :-/

Why are you reading this? Play the game! It's fun! More fun than reading!
Reading is what we did BEFORE we had computer games! I guess you're reading
this because you want to know how it all works. Or you just can't resist
opening any file called "README" or "Latest Updates." Or you pirated the
game and don't have a manual. Or you just like to read.
Whatever! Here it is!
OVERVIEW OF THE GAME
In FULL THROTTLE, you control Ben, leader of the Polecats. The controls
for each section of the game are not all the same, but you'll always be
steering Ben through different environments, using him to find clues,
and helping him fight his way past obstacles. Let's go over the first
couple obstacles together. I know this can be hard, and I want to be there
for you.
THE KICKSTAND
Ben's been tricked, knocked out, and thrown out with the garbage. This makes
him mad. He needs to catch up with his gang, but someone's taken the keys
to his bike. Help Ben make someone pay for this.
First, get Ben out of the dumpster. He'll punch the dumpster wherever you
point the cursor and click, so just hit the right place and he'll pop out.
Now, walk Ben around. Just point and click on the ground and watch him go.
Hear the pitiful crunch of helpless dirt as Ben crushes it beneath his mighty
boots! Look at the cursor. When it's over an interesting object, it either
goes "hot" (framed by red brackets) or becomes an arrow. The arrows indicate
exits. Click with an arrow, and Ben will walk that way and enter another area.
(Double-click with an arrow, and Ben will jump to the new area immediately!)
When the cursor is "hot," (for example, when the cursor is over the dumpster)
click and HOLD DOWN the mouse button. Yikes! What is that thing!? It's a
flaming tattoo! It's covered with icons. These icons represent actions Ben
can take on the object you clicked on (the dumpster). While the tattoo is on
the screen, slide the cursor over the boot and let go. Ben should kick the
dumpster. Bring up the tattoo again, slide the cursor over the eyes, and
let go. Ben should examine the dumpster. Next, try the hand and the mouth.
This is how Ben interacts with his environment. Try different actions on
different objects and see if you can make something interesting happen. Use
your fists on the front door of the bar. Talk to the bartender (use the
mouth.) Kick the piano. Try it all, until you find Ben's keys.
When Ben's sitting on his bike he only has one thing on his mind: RIDING.
You can only control WHERE Ben drives at this time. When the cursor
passes over something Ben can drive to, you'll see a big yellow road
sign. Click the mouse when you see the road sign, and Ben will ride off!
Click anywhere else on the screen, and Ben gets off his bike and walks.
Walking's pretty lame, I know, but sometimes you gotta do it.
THE BIKER ROAD DUEL
This part is totally different from that last part. Forget about that part.
Now you're on the road! There are no cops here, no rules--just bikers.
Bikers who are looking for trouble. Just ask Father Torque . . .
Swerve left or right with the mouse. If you see a green exit sign in an upper
corner, clicking the left mouse button will make Ben take the exit. If Ben's
in a fight, select a weapon by clicking the right mouse button. Use the
weapon by clicking the left mouse button. If at first you don't succeed--
punch, punch again.
NOW YOU'RE ON YOUR OWN!
It's just you and Ben. Don't let him down!
When you finish, go buy Day of the Tentacle!

If I remember rightly, Ben was going to have some kind of weird dream inspired by native american mythology (e.g. the cayote, like in that Simpsons episode).... the idea was returned to, in another form, for Psychonauts.
Interestingly, Full Throttle was strongly criticised by some reviewers when it came out because of its length. PC Zone summed it up by sauing "in the days that LucasArts could do no wrong, they did wrong" (or something to that effect). Now it's practically an advantage of the game, that you could play it through in one sitting if you wanted to. But then it is a lot cheaper to buy now.

I believe it was cut because Ben's dream/hallucination/vision-quest was actually going to be triggered by him ingesting peyote, and the LEC bigwigs feared they would be seen as condoning drug use.
Cue the Mojo LSD jokes in 5... 4... 3... 2... 1...

BUT I WAS and I´M more looking of the 1st and 2nd SE then TOMI! And yes they must make no further SE!
And the atmosphere of MI1:SE is really great. Especially at the beach. Makes fun for vacation.
