Um, I'm pretty sure that its illegal for you to commandeer the SCUMM system for your own twisted purposes. It is still property if Lucasarts. You could probably use one of the many Fan Game engines that are available around the net, but you risk the Lucas Lawyers hunting you down and formatting your brain for stealing their trademark character.
Just because people think what I say don't make sense, doesn't mean I don't like popsicles.
Basically, you won't get far. I don't see a point to editing an entire game that even if it's posted as a fan game, either a.) no one will ever really play or b.) it will be shut down weeks after started by LEC. Trust me they find out.
