I think that this is a subject for the Land Of The Dead Forum, but anyway Yohein have a Grim Fandango spanish version. He can help you out with this, and if not, you can submit one to translate and something can be done.
Do you mean sound or just plain text? I don't have the audio, but El Virus sent me the Spanish versions of some of the poems a long time ago. I've got them archived on my site here.

There are lots of them in VampireNaomi's web, but if there's another one you want, I can translate it. I don't remember the official translation in the game.
