I'm hoping for a fully-customizable appearance, hopefully a la Mass Effect. Only this time, I think there should be more hairdos (long hair for males, imo) and build adjustment (including some... voluptuous options for females).

As much in-depth customisation of height, build, face, hair, etc. as possible along with the option to choose either 'zombie' DS transitions or decent looking transitions (i.e. Sith eyes ONLY!)
And the ability to choose our own base clothing appearance would be welcome, rather than a standard that a million others also have...

For PC creation, I think it would be nice to have somewhere in between Galaxies and Mass Effect PC creation. ME was almost too face oriented, and if we took it down a bit and added a few body tweaks from Galaxies, that would work out nicely.

As proof of concept that not only can it be done but that it works for an MMO and full customization look at secondlife. It would be great if they used some of those in game.

I certainly hope there are more character creation options than in Mass Effect. It was very limited imo. One of the very few faults I had with the game. I'm also hoping there will be a lot of different colour options for the Twi'leks, including the new black & red from Legacy.

For facial customization, you can expect about 3 settings per slider. I can't remember where this was said but I know it is how they said they will be doing it, instead of fluid sliders.

many hair styles for males were limited because your character was a military officer. yeah the game took place in the future but it would've made little sense for your character to have long hair if he was in the military.

As long as males can change shoulder/upper body size and females can change breast, then I'm fine with the character customization.
One of my main beefs with WoW was how little customization it gave you. You were either supermodel girl, or body building guy no matter the class.
Height would also be nice. Being a 6 foot girl myself, I'd like to create a tall avatar.

Wait wait, when was there a black Twi'lek in Legazy? Or do you mean red with black tattoos? That's fairly typical and a red skintone base would be cool with the option for tattooing in the game.

Yeah, and I think classes should have limitations on physique as well. A jedi or a solider will naturally be buffer than a non-melee class. Overall, I'm hoping they give the 'toons a general athletic look, w/o them being mega-studs or ultra-babes.

It's useful for keeping model size and rendering issues down, but in this day and age of computers, I think that's an issue we should be moving away from.

Being a guy who often plays chicks, I'm tired of the very human sexual dimorphism, ie: chicks shorter and sexy, men taller and buff. I'd like to make a tall chick too.
However, with all these body customizations, I would like to have your appearance have an influence on the game. ie: a shorter, cuter, more feminine character could have an easier time charming certain characters who would be programmed to respond favorably to those characteristics, while a tall, buffer chick would be able to intimidate characters for the same result.
Fable 2 is a good example of this. People like you or dislike you based on your appearance.
All I don't want to see is inter-linked sliders like Oblivion. It was great for keeping certain adjustments in check, but it really sucked tyring to get a minor adjustment to the nose w/o ripping out the center of the face.

as long as I dont have to look like Shrek, or only be able to wear a robe... I'm good. I want to blend in with the galaxy, be able to sheath my saber so people dont immediately know my class, you know, They think I'm gonna pull a pistol then they got 3 feet of plasma blade through the gut hehe.
Heights and builds... I like to make my toon look like me really, so it's nice to have a varied palette.

They did it in Fable and Fable 2, though I can't think of any other major games with it. It would look a lot better than the "undead" look darksiders took on in Kotor. And, again, I'd like tats to affect the way NPCs react to you.

They could take a page from Fable 2's book, and have certain tattoos only available in certain places, or have Epic tattoos as drops.

If WoW had a profession to be a tattoo artist, that would be pretty cool, if TOR has such a possibility, it would be doubly cool.

Since I'm most likely to go Sith, I'd like a sort of Nihilus-esque appearance. Meaning?
Well for one, Order of the Sith Lords-style robe with red trim. Then a mask. I want some sort of cool half-mask like Nihilus' but not white bone and more detailed.
My actual physical appearance? Tall, somewhat muscular (but not too much since I play Consular), short black hair, and green eyes. However, the eye in the mask-side must glow demonic-red. This will be somewhat symbolic: half of me is ye cool-looking dude, the other half is EVIL!!! MUWAHAHAHAHAHA!!!
My lightsaber? Sleek, ebony single piece, curved. No protruding mechanical parts. This will be a Makashi hilt, explaining the curved part. As predictable, red blade.
As you can see, where some people prefer subtly (which is something I respect though) I have no problem declaring my class and allegiance. All hail the Sith! 
As of 3/14/10, TSL is restored. The Sith Lords Restored Content Modification by Stoney and Zbyl has been finished and can be downloaded here.

Eye color, skin color, hair style and color, facial hair. Shape of the nose, face, and eyes. Height, weight, and body type. Basically, Madden 2009 meets Guild Wars, as far as customization.

One game series I like to compare as far a standars and being "on par" is the SMACKDOWN! series. While not the greates fighting game...that game had nearly EVERYTHING in terms of customizability...
I would not care *so* much about clothing (Whose *really* going to give a crap about 351 different pairs of pants to choose from?! >_>)...but if you were to be able to, say change length and thickness of lekkus (head tentacles on Twi'Lek characters), or even choose some preset voice, that would be more like it. Length of Ithorian eye sockets.
In Smackdown you had these to customize:
Appearance wise
What your character wore
Tattoos
Skin appearance
Eye color
Hair color/length/etc
Facial hair (it was even avail. for women >_< Bearded circus ladies? freaks? anyone?)
Decorations (piercings, jewelry, etc.)
Facial features...this was a feat in itself... Though with a picture I could imitate just about anyone.
Model:
Overall body & part size (length, width, thickness)
Body shape (between obese, twig skinny, and buff)
Height in that game your scale was from 5'0" to 7'2" though I found ways around that.
Ehh, for women...there is a bonus: you can choose bust size & type.
It all only went from there.
If EA is truly going to blow other games away, I think cstomizability ought to be another category.
Only thing is: be prepared for the process to take a half hour or longer depending on how much in detail you want to be.
This is all just supposition, we'll see what is offered once we get around to actually seeing it.
