One of my favorite parts about the prequels is the detail they gave the environments. For me, it would be a toss up between Naboo and Tatooine.

If I lived in the Star Wars universe, I would like to visit Cato Neimoidia. A planet with a mild climate, pristine forests, and incredible architecture - sports stadiums, hotels, and casinos hanging from massive arches over picturesque canyons that only the wealthiest Neimoidians can afford to visit. It's like the entire planet is one giant country club, but I think I could ignore that as long as my vacation isn't too long.

From the prequels, I'd have to say Coruscant, Mustafar, and Naboo. The former two I like because they're COOL, the last because it's beautiful!
From anywhere in the EU, probably Byss comes to mind. It's a city-planet like Coruscant, only much more stylized, and a center of darkside power.  It was Palpatine's stronghold in Dark Empire, with those humungous fleets of Star Destroyers (including SSDs!) and was also the home base of the Eclipse and Galaxy Gun.
You can tell I think (fictional) evil is cool, huh?

From the prequels I would say live in Coruscant upper tiers but with a holiday home in Naboo.
From the EU Dantooine appeals as does Korriban or Dromund Kaas depending on you mood and timeframe.

Maybe it'd sound odd to a lot, but I think Ithor is a nice one. Merely because of the protection it is given by the Ithorians to the extent where they seldom even go to the surface, if at all. I love the whole idea of a planet kept as healthy as possible by its inhabitants.

And, as for planets shown in the movies, Tatooine is my favorite by far. For those who don't know, it's actually based off from a real place in Africa with a similar name. ^_^
